I\u2019m here in Red Hook on St. Thomas in the Virgin Islands, and I\u2019m here this morning with Audrica Richards. Welcome Audrica and thanks for taking the time to talk with me.<\/p>\n<p><strong>AR<\/strong>: You are welcome.<\/p>\n<p><strong>JB<\/strong>: Could we begin by you telling me a little bit about yourself, where you were born and where you grew up?<\/p>\n<p><strong>AR<\/strong>: OK. My name is Audrica Richards. I was born on the island of Dominica, Commonwealth of Dominica, and after school I came here when I was like twenty-three years of age, and then I migrated here and married. I have two children. One if my sons attend school right here. My daughter, she is in college. She graduated in 2012. She live in Houston, Texas.<\/p>\n<p><strong>JB<\/strong>: Oh wow. It\u2019s Dominica you say?<\/p>\n<p><strong>AR<\/strong>: Yes, Dominica.<\/p>\n<p><strong>JB<\/strong>: OK. So you went to elementary and high school there?<\/p>\n<p><strong>AR<\/strong>: Yea, uh-huh.<\/p>\n<p><strong>JB<\/strong>: Were there school lunch programs there?<\/p>\n<p><strong>AR<\/strong>: No. We had to go home for our lunch every day.<\/p>\n<p><strong>JB<\/strong>: OK. That\u2019s pretty common in the islands isn\u2019t it?<\/p>\n<p><strong>AR<\/strong>: Yea, yea. But that was how much years ago?<\/p>\n<p><strong>JB<\/strong>: So after you got here, how did you get involved in child nutrition?<\/p>\n<p><strong>AR<\/strong>: Well I had applied for the program and they call me and I had an interview, and I was accepted because of my early stage of working I used to work in restaurants before since I came here, and hotels. And I had owned my business. I had a little business of myself, which I owned for like sixteen years. But because of circumstances I had to close it because things were slow.<\/p>\n<p><strong>JB<\/strong>: What was it, catering?<\/p>\n<p><strong>AR<\/strong>: No, a little restaurant, a little deli, making sandwiches, salad, chicken \u2013 a little snack shop.<\/p>\n<p><strong>JB<\/strong>: I\u2019ve always wanted to do something like that. What did you call it?<\/p>\n<p><strong>AR<\/strong>: Crispy Delight Fried Chicken and Coffee Shop.<\/p>\n<p><strong>JB<\/strong>: OK. That\u2019s great. Well once you got into child nutrition has there been a mentor or someone who kind of helped guide you along the way?<\/p>\n<p><strong>AR<\/strong>: Yes, uh-huh, yes, Ms. Isaak, and my supervisor Ms. Derek.<\/p>\n<p><strong>JB<\/strong>: And how would they help you?<\/p>\n<p><strong>AR<\/strong>: In every area.<\/p>\n<p><strong>JB<\/strong>: So what positions have you held in child nutrition?<\/p>\n<p><strong>AR<\/strong>: Well I\u2019m under food service worker.<\/p>\n<p><strong>JB<\/strong>: And what\u2019s a typical day like for you?<\/p>\n<p><strong>AR<\/strong>: We serve the lunch for the children.<\/p>\n<p><strong>JB<\/strong>: And what are some of their favorite menu items?<\/p>\n<p><strong>AR<\/strong>: They like baked macaroni and cheese, baked chicken. They like chicken soup also. They like the burgers, but they don\u2019t like the one we really have. They like pound cakes, but the only situation I always say, they don\u2019t like the whole wheat.<\/p>\n<p><strong>JB<\/strong>: They don\u2019t like the whole wheat?<\/p>\n<p><strong>AR<\/strong>: No, they prefer the white one.<\/p>\n<p><strong>JB<\/strong>: Maybe they\u2019ll get used to it.<\/p>\n<p><strong>AR<\/strong>: Yea, yea.<\/p>\n<p><strong>JB<\/strong>: Is there anything unique about the Virgin Islands regarding federal child nutrition programs?<\/p>\n<p><strong>AR<\/strong>: Repeat again.<\/p>\n<p><strong>JB<\/strong>: Is there anything unique, something that\u2019s only done in the Virgin Islands, about feeding children in the school?<\/p>\n<p><strong>AR<\/strong>: You know, with my experience working for myself I deal with a lot of people, children, the junior-high school, I used to serve a lot of them, so I have like an experience.<\/p>\n<p><strong>JB<\/strong>: So you\u2019re used to dealing with people.<\/p>\n<p><strong>AR<\/strong>: Yea, I used to deal with them because I had the little snack shop, so I do that before.<\/p>\n<p><strong>JB<\/strong>: What are some of the biggest challenges you\u2019ve faced? Have there been any problems?<\/p>\n<p><strong>AR<\/strong>: On my job? No. We work as a team.<\/p>\n<p><strong>JB<\/strong>: And how long have you been doing this?<\/p>\n<p><strong>AR<\/strong>: It\u2019s just a year now since I am in the program.<\/p>\n<p><strong>JB<\/strong>: What do you think is your most significant contribution to the child nutrition program?<\/p>\n<p><strong>AR<\/strong>: Taking care of the kids and lookout for them and so, encourage them and so.<\/p>\n<p><strong>JB<\/strong>: What advice would you give someone who was considering child nutrition as a profession today?<\/p>\n<p><strong>AR<\/strong>: They just have to be responsible and know how to do service, general service, because we\u2019re dealing right here with the young adults and you know, sometimes they get a little out of control, so you just have like to correct them in a small way.
