Instructions

  • Place 3 qt (about 6 lb) plantains into a steam table pan (12" x 20" x 2¹⁄2"). Spread evenly. Set aside for step 4.
    For 25 servings, use 1 pan.
    For 50 servings, use 2 pans.
  • Critical Control Point: Cool to 40 °F or lower within 4 hours.
  • Melt margarine in a small stock pot uncovered over medium heat.
  • Add sugar, water, and ginger. Stir well until sugar dissolves. Remove from heat.
  • Pour 1¹⁄4 cups (about 10.7 oz) ginger mixture over each steam table pan.
  • Bake:
    Conventional oven: 350 °F for 15–25 minutes.
    Convection oven: 325 °F for 15–20 minutes.
  • Critical Control Point: Hold for hot service at 140 °F or higher.
  • Serve 3 plantains.
