Measure
- 1 ½ cups Oat flour (rolled, dry)
- 2 qts 2 cups Whole grain flour
- 3 Tbsp 1 tsp Baking soda
- ¼ cup Ground cinnamon
- 1 qt 1 cup Brown sugar
- 12 each Eggs
- 1 qt 1 cup Vegetable oil
- ¼ cup Vanilla extract
- 1 gal 1 qt *Granny Smith apples,peeled and grated

- 2 ½ cups Brown sugar
- 1 cup Granulated sugar
- ¼ cup 2 Tbsp Ground cinnamon
- 3 ¼ cups Whole grain flour
- 1 ½ cups Butter, melted

Instructions
- Combine all dry ingredients in a large mixing bowl.
- Add all liquid ingredients in a mixing bowl. Stir until combined.
- Peel and grate apples. Stir into liquid ingredients. Pour liquid ingredients over dry ingredients.
- Stir with a rubber spatula just until ingredients are combined. Do not overmix.
- Using a No. 12 dipper, scoop batter into muffin tins lined with cupcake papers.
- Combine all ingredients for crumb topping. Place crumb topping on each muffin using a No. 60 scoop.
- Bake for 20-25 minutes at 350 ºF.
- Cool before serving.
