                                          Instructions
                                           

                                          • Wash hands with soap and water for at least 20 seconds.
                                          • Preheat oven to 400 °F.
                                          • In a small bowl, combine cinnamon, oil, orange juice, and salt. Whisk to mix.
                                          • Add sweet potatoes to cinnamon-orange mixture. Toss to combine.
                                          • Spray sheet pans (18" x 26" x 1") with nonstick cooking spray. Place sweet potatoes in a single layer (uncrowded) on a sheet pan.
                                            For 25 servings, use 1 pan.
                                            For 50 servings, use 2 pans.
                                          • Roast for 20 minutes. Heat to 140 °F or higher for at least 15 seconds.
                                          • Remove from the oven and let rest for 2–3 minutes.
                                          • Serve ½ cup (#8 scoop). Serve immediately, or keep warm at 140 °F or higher.
