                                          Instructions
                                           

                                          • Combine spices in a small bowl. Set aside.
                                          • Brown ground beef uncovered over medium high heat in a large stock pot.
                                          • Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
                                          • Drain and rinse beef. Return beef back to stock pot.
                                          • Add spices and salsa to cooked beef. Simmer uncovered over low heat for 5 minutes.
                                          • Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
                                          • Critical Control Point: Hold for hot service at 140 °F.
                                          • Spread sweet potato fries evenly on a sheet pan (18" x 26" x 1") lined with parchment paper and lightly coated with non-stick cooking spray.
                                            For 25 servings, use 1 pan.
                                            For 50 servings, use 2 pans.
                                          • Bake:
                                            Conventional oven: 425 °F for 15 –20 minutes.
                                            Convection oven: 425 °F for 12 –15 minutes.
                                          • Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
                                          • Critical Control Point: Hold for hot service at 140 °F.
                                          • Assembly:
                                            First layer: About 16 fries (3 oz) in the bottom of a paper boat or bowl.
                                            Second layer: 6 fl oz ladle (about ¾ cup) of beef mixture on top of fries.
                                          • Top each taco boat with:
                                            About 1 tablespoon of tomatoes, about 1 teaspoon of cheese, and ½ teaspoon of cilantro (optional).
                                          • Serve 1 taco boat.
