This powerpoint training provides guidance to child nutrition program (CNP) staff, including nutrition service directors, nutrition specialists, and cafeteria managers, on how to standardize recipes for the school meal program, using the United States Department of Agriculture (USDA)’s three phase approach. This training includes information on how to feature locally grown ingredients in the CNP recipes, solicit community and student input, and market the recipes.
Learning Objectives:
• Describe a standardized recipe and the benefits of using one
• Recognize the benefits of using locally grown ingredients and scratch cooking to develop recipes students
will love
• List the three phases of the USDA Recipe Standardization process
• Locate resources that will assist in the standardization process such as the Food Buying Guide (FBG) for
CNPs and the Recipe Analysis Workbook (RAW)
