Instructions
- Shred apples, carrots, and cabbage (if necessary). Combine in a large bowl. Toss lightly.
- Dressing: Combine yogurt, mayonnaise, lime juice, paprika, cumin, onion powder, chili powder, and salt. Stir well.
- Pour dressing over vegetable mixture. Stir well.
- Transfer coleslaw to steam table pan.Critical Control Point: Cool to 41 ºF or lower within 4 hours.Critical Control Point: Hold for cold service at 41 ºF or below.
- Portion with a No. 8 scoop or 4 oz ladle (½ cup).
