ICN’s Applied Research Division Director
In June of 2017, Dr. Keith Rushing was named as Director of the Applied Research Division. Prior to this promotion, Keith worked as a research scientist for the Institute for 10 years.
Keith’s higher education achievements include a Doctorate Degree in Family and Consumer Sciences Education from Texas Tech University in 2005, a Master’s Degree in Nutrition and Dietetics from the University of Southern Mississippi in 1993, and a Bachelor’s Degree in Marketing from Mississippi State University in 1989.
In 1993, Keith became a registered dietitian. His nutrition work experience includes 11 years in academia at the University of Southern Mississippi as a nutrition researcher and faculty member; 10 years foodservice management (healthcare and schools), and 4 years in clinical nutrition. His current research interests include financial management and productivity as they relate to the operation of school nutrition programs.
Keith has been married for 23 years to his best friend, Jill, and he has two children, Emily and Buck, both enrolled at Mississippi State University
